Think twice before cooking with aluminum
Those of you who are skilled in the kitchen may have known this, but it was news to me. It turns out that certain foods should never be cooked directly on aluminum.
Foods higher in acidity, such as tomatoes, lemons, apples, and others, can cause aluminum to leach into the dish being prepared. Highly acidic ingredients contain large numbers of hydrogen ions, which can pull metals into food. This not only creates a metallic flavor and discoloration, but can put people with kidney issues at risk of accumulating aluminum in their bodies.
Professor and food safety expert Stephanie Smith advises, “Using parchment paper or a silicone baking sheet as a barrier would be the best choice to avoid leaching.”
