Coconut Milk - Is It Good or Bad for You?

Coconut milk. Delicious, right? Earlier today, when I got home from a hike, I had some granola cereal in coconut milk that was left over from the ingredients that went into a pumpkin pie. I enjoyed it, and I was curious of its nutritional value.

It definitely interested me. I like regular cow's milk and have no issues with it, but, since your pumpkin pie was so delicious, I might be inclined to give coconut milk a try just to change things up. Thanks!

As a child while living in Sicily, a day at the beach was not complete without the coconut man showing up and selling fresh coconuts. He'd break it open and cut it in slices which was the prefect cool refreshment for a hot day on the shore. Back then, no one worried about cholesterol, we just enjoyed some of nature's goodness. I've never cooked or baked with coconut milk, but you've inspired me to try.

Coconut milk in baked goods is ok but I am not a fan. Tried but now. Give me old fashion cows milk 😀

Some tout the lauric acid found in coconut milk to be better at fighting some fungal infections than standard antibiotics.
